Peanut Butter, Banana and Maca Power Smoothie! Vegan, Paleo and Refined Sugar Free. A healthy, quick and simple breakfast to sustain you through till lunch.

Oh, hey guys! Just me again! Sorry about the lack of post last week. This past month has been super busy for me and unfortunately it meant a slip in posting last week, something I have been trying to prioritise despite how busy life gets! It does happen though, and I hope you forgive me!

This week I’m sharing my favourite breakfast for these busy December days: a power smoothie that keeps me going till lunchtime! It has a generous serve of protein from peanut butter and lots of fibre from banana, which not only is a flavour match in heaven, but also is substantial enough to keep you feeling full. A delicious and nutritious start to your day!

Maca, that I’ve spoken about before, is one of my favourite superfoods (actually, it’s the only superfood supplement I regularly use). Great for regulating hormones, loaded with vitamins and great for giving you sustained energy… Just what you need for breakfast! If you’re in a colder part of the world and need a warming drink, see my Happy Hormones Hot Chocolate which also uses maca… Totally acceptable for breakfast too! xx

You can substitute in almond butter if you’re averse or allergic to peanuts. I’ve put sweetener as optional, as I don’t usually sweeten this smoothie, but it really will depend on how ripe your banana is. If you need a chocolate hit, try adding a teaspoon of cacao too!

Serves 1
Prep time: 2 min

Peanut Butter and Banana Power Smoothie

250ml | 1 cup unsweetened almond milk (or milk of choice)
1 large banana (fresh or frozen)
1.5 tbls peanut butter (or other nut butter)
1 tsp maca powder
1 tsp of maple syrup or 1 medjool date (optional)
1 tsp cacao powder (optional)
a pinch of nutmeg or cinnamon (optional)
a pinch of salt (optional)

Blend all ingredients in a high powered blender and serve.

Can be made up to one day ahead and refrigerated, but best fresh.
